Start by preheating your oven to 375°F. Then, prepare your pickles by slicing them lengthwise so they can be stuffed. Combine 8 ounces of softened pimento cheese with 2 tablespoons of mayonnaise in a bowl and stir until well blended. Stuff the pickles with the pimento cheese mixture. Next, wrap each pickle with a slice of bacon and secure it with a toothpick. Place the bacon-wrapped pickles on a baking sheet and bake for 15-20 minutes, or until the bacon is crispy.
