    I’m almost embarrassed to say that I really liked these. I will do mine a little differently next time by cooking the bacon really crisp and crumble it up to put on the pickles after the cheese has melted. I cooked them for 15 minutes using convection bake and the pickles were super warm and crispy!!! I’ll also use Cabot seriously sharp cheddar as the pimento cheese seemed a little bland. 5 stars for the idea!!!
